I’m a big foodie and love discovering new things, but when I tucked into some Mixed Pickle with my curry the other night I was surprised to see one of the main ingredients was something I didn’t recognise.

Amongst the chunks of sweet, curried fruit and veg were several unusual green berries – about the size and shape of a caper, but much harder and revealing a dark red centre when cut open. The mixed pickle in question was from leading curry sauce and condiment maker Patak’s, which lists the mystery fruit as Karamdas.

Perfect One Pot Roast Lamb

One of the simplest ways of creating a wonderfully tender roast dinner with perfect results every time and, best of all, hardly any washing up.

1 leg of lamb joint
3 onions
Potatoes
Carrots
Parsnips
A glass of white wine
Pint chicken/beef stock
A handful rosemary sprigs
Salt and pepper

Pre-heat your oven to 150 degrees C (Gas Mark 2).
Roughly chop one of the onions and put into a large roasting tray with a really good splash of olive oil.

Recipe: Two Minute Pesto

Forget buying a jar of pesto from the supermarket, they are incredibly overpriced and usually full of lower quality ingredients than you can make at home.

4 handfuls fresh basil
2 cloves of garlic
A good pinch of salt
A handful of pine nuts
A handful of grated Parmesan
Good quality extra virgin olive oil

If you have one of those mini food processors then it is perfect to make pesto, if not a large pestle and mortar will do the job with a bit of elbow grease.
